With more people working from home these days due to Covid, making lunch at home is probably happening more frequently. This means we have to start getting creative– and I’m not just talking about elevating your regular turkey sandwich. I wanted to provide you guys with a grocery list of staples to have in your fridge & pantry so you can make healthy, different, and easy lunches while you’re WFH. I’ve been freelancing since I graduated from college, so take it from a seasoned lunch-at-home pro 😉
It’s very normal to graze the fridge over the course of the day in search of something you’re in the mood for, when all of a sudden you’ve had three different snacks and you still don’t feel satisfied. This is why I like to have prepped foods that are nutritious and ready to go in a bowl, salad, or on it’s own. Grains, proteins, fruits + veggies, and herbs.
My routine is designed with Monday as the “prep” day, but depending on your schedule this can obviously be done whatever day works best. I usually cook my crock pot chicken (chicken breast, chicken stock, onion, celery, carrots, spices, sometimes tomato) and quinoa on Monday to make things quick and efficient Tuesday-Friday. The rest is pretty easy and quick to throw together.
DISCLAIMER: The below grocery list is based off of MY taste buds / preferences, so you can use it as a guide and then customize it to your liking. This goes for all categories! I also don’t have ALL of these ingredients at one time. This is just a compilation of the ingredients I buy regularly. I am a big believer in store-bought sides, wraps, and grain salads so I included what store-bought snacks/meals I buy regularly to enjoy for lunch.
